Less than a year after opening, Huset set even eternally cyncial Roma Norte on fire with an original take on country Mexican food and a lot to write home about.

“Huset” is of course, Swedish for house. And there’s plenty to make you feel right at home. In a once-abandoned Roma Norte house, there’s a lot to be said for a little hardwork, and a lot of inspirations.

The brainchild of Venezuela-born chef, Maycoll Calderon, Huset is the culmination of a career that started with a 16-year old cook. Calderon worked in restaurants all over the world and came to Mexico to put in years at the renowned J & G Grill. On his own now, he’s put all that knowledge to work serving some of the most excited palettes in the city.

With a field kitchen, a the chef calls it, almost everything is cooked over firewood, not gas. And everything on the menu is prepared with its own essence and personality.

Maycoll’s years in New York and other cities only better prepared him to greet Mexico with open arms and shopping bags crammed with market finds. A new menu is printed every day Huset and seasons can bring rapid and drastic changes. Menus revolve around truly grand seasonal protagonists

This season’s was a red snapper with roasted sesame emulsion, but grand actors make regular appearances on the restaurant’s Facebook page.

This season has also featured plenty of beef, an illustrious avocado pizza, and a strawberry cake, but as mentioned, menus are created daily and they’re never dull. Everyone is greeted with a generous house focaccia that makes reading the menu just one more part of the great adventure. With nothing frozen, the daily trips to Central de Abastos would make a TV show in and of themselves.

With a full cocktail bar and a little bit of light music there’s no reason dinner can’t turn rather quickly into a full blown celebrations. The Tulum Swizzle is mixed with white coco, a tequila-like liquor, sotol, from Durango and and finished with basil and kiwi.

Mole, the word comes from the Nahuatl, molli, is always among the most emblematic of Mexican dishes. There are multiple varieties of moles, each prepared with different chiles and spices. This mixture is then thickened with corn, vegetables and sometimes with a meat stock. And then it’s set to stew.

The interesting thing about mole is that over the decades it’s continued to evolve. More and more chefs and restaurants strive to include a mole on their menus, with original dishes inspired by nothing but that original dark sauce. Dishes today range from the most traditional to the most modern and extravagent. And they always bear something of the original identity in their complex characters and flavors.
